I’m terrible at following recipes. I love acknowledging rules and conventional ways of doing things and then walking the other way, or modifying, personalizing and making life’s ingredients fit my needs.
One recipe I always follow though is the one I’ve spent my life writing. It’s the recipe for my health and it’s been fine-tuned and finessed for as long as I’ve been here, paying attention. Having a formula to follow frees us from decision fatigue, and guarantees we’ll have what we know we need. And when we’re feeling like free-styling, that’s always an option too.
Creating health is a process that’s always in progress. As in, progress over perfection, comparison, or obsession. Do you know how you do that? If not, now’s a great time to create your own recipe for it. Meanwhile, a recipe for this cake …
INGREDIENTS
3 TBSP plant-based protein powder (vanilla or unflavored recommended)
1 TBSP ground flax or chia seed (I use a coffee grinder to make my own)
1/2 tsp baking powder
1/4 teaspoon baking soda (For extra lightness when cooking with HTB flour, use 1.5 - 2 times more baking powder or baking soda. If increasing the b-soda, consider omitting or reducing salt in turn.)
2-3 TBSP date sugar or sweetener of choice
3 tablespoons non-dairy milk, water or herbal tea (I used a chai blend)
Splash of vanilla extract
Toppings: Fresh or dried fruit, grated 100% chocolate, citrus zest, as you please!
INSTRUCTIONS
Combine all ingredients in a mixing bowl and stir until a thick batter consistency.
Lightly grease a small ramekin. Pour batter in and bake at 350F for about 20 minutes, checking center with a toothpick to ensure cooked through.
Enjoy! (These also store refrigerated well so make as many as you like at once.)
